01.03.20 Cauliflower
We do everything with cauliflower in our household; we roast it, sauté it, puree it, make it into rice and even into pizza and flatbread. It must be the most versatile and shapeshifting cruciferous there is. Here is a simple pizza we made:
Ingredients:
1 large head of cauliflower, riced in a food processor
1 cup of parmesan cheese grated
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1 egg
1 Tablespoon coconut flour
1 teaspoon xantham gum
Plus any toppings you like
Method:
Preheat oven to 400 degrees.
Heat the riced cauliflower in a dry skillet over medium heat, stir it often for about 10 minutes until all moisture is gone.
Add parmesan cheese and seasonings and cook until cheese is melted.
Remove from heat and stir in egg.
Cover baking sheet with parchment paper and coat with a thin layer of olive oil. Spread on the cauliflower mixture very carefully, trying to make it as even and thin as possible without breaking it. Edges can be slightly thicker to form the crust.
Bake for 20 minutes. Add your choice of toppings (I used mozzarella cheese, homemade pizza sauce, basil and olives) and bake for another 10 minutes.
