Arugula Forest
We have an arugula forest…
She began rather humbly; just a small packet of seeds, a few handfuls of compost, some rain and loving thoughts. A few weeks later, her tentative seedlings poked themselves through the dirt. Then, tender leaves began to appear. In no time at all we had enough arugula for salad, every day, since January. Now she is unwieldily, unrestrained, sending her tiny flower seeds skyward in promise of an arugula forest for many years to come.
Here is the Arugula Forest Pesto I ate for lunch today. Blend lots of arugula (add a little basil if you have some on hand), squeeze in 1/2 a lemon, throw in a handful of pine nuts (walnuts, pistachios or macadamias will do too), lots of olive oil, a clove or two of garlic, and salt. This will delight almost any savory dish, but my favorite way is to serve it on compost spaghetti squash.
No kidding, bury the seeds of just one spaghetti squash in your back yard and soon enough you will be swimming in it too.
