05.25.20 Unripe Nectarine Jam
As I mentioned a few days ago, I stripped our nectarine of half its fruit in an attempt to save what remained for better growth and taste. But what to do with all of the unripe, harvested fruit? Well, Sabrina made jam. She blended the fruit and then cooked it for about 20 minutes total, bringing it to a boil first and then adding in about 4 tsp of monk fruit sweetener. Iām sure it will disappear within a week as a topping for yogurt, toast and likely by the spoonful straight out of the jar.
