02.27.20 Macadamia Nuts

You may remember that I picked up some macadamia nuts from Oceanside Crop Swap. I have been holding on to my treasure and waiting for the right moment of inspiration to do something with them. That moment came this morning when I decided to make chocolate covered macadamias. The best thing about whole macadamias is it gives you an excuse to sit on the ground, get some sunshine, listen to the birds, grab a hammer and get to smashing.

Chocolate Covered Macadamia Nuts:

  1. Melt 4 ounces of chocolate in a glass bowl over double boiler. I used a pyrex and allowed it to heat evenly with only the steam hitting the glass. I used 100% cacao chocolate but, any chocolate of your choice will be fine.

  2. I added a tsp of vanilla and a 1/2 tsp of stevia crystals.

  3. Add the macadamias when chocolate is melted and mix well, turn off heat.

  4. Use a spoon to place a small chunk on parchment paper and refrigerate until hard.
