01.27.20 Collard Greens
When my girls were little, I would create great excitement about “green tacos.” I would get some collard greens and give them a quick 10 second heat in the pan, smear a big gob of peanut butter down the center, and then roll them up like a taco. We ate them on our front porch for a late afternoon snack. The other day when I picked up some collards at the Oceanside Crop Swap, I knew exactly what I was going to make, only nowadays, I use almond butter.
