01.14.20 Winter Tomatoes

We had thousands of tomatoes growing in our yard this summer. Now, they barely produce anything at all but every now and again, I find a little splash of color under all the overgrown green. Today, there was enough to make a winter tomato salsa. I’m not sure what my guy is cooking tonight but this will add a perfect splash of color and flavor on the plate.

Keep it loose, a little pepper if you have few tomatoes, red onion, garlic, cilantro, lime, a dash of olive oil and salt.
